Kokura’s original fried udon is customarily made by boiling dried noodles, which create the characteristic grilled appearance and springy texture.
It’s fried together with slices of pork and vegetables, and each restaurant seasons it with their own original sauce (or with soy sauce).
There are several Okonomiyaki ((savory pancake with various ingredients) variations, puls dishes grilled in an iron plate using Kitakyushu ingredients like fried udon .
